Instructions
- Prepare the cauliflower: Wash the cauliflower well and cut it into smaller florets. Cook by steaming or boiling until very tender but not falling apart (about 10-15 minutes). Drain very well and squeeze out excess water with a clean dishcloth or paper towels. This step is crucial to prevent the fritters from becoming watery
- Mash the cauliflower: Transfer the drained cauliflower to a large bowl. Mash with a fork or potato masher until it forms a coarse purée
- Mix the ingredients: Add the eggs, oat flour, grated Parmesan cheese, chopped parsley, salt, and black pepper to the bowl with the mashed cauliflower. Mix well until a homogeneous and pliable dough forms
- Prepare the filling: In another bowl, mix the grated mozzarella cheese with the shredded chicken and corn (if using)
- Shape the fritters: With lightly oiled hands, take a portion of the cauliflower dough (about 2 tablespoons). Flatten it in the palm of your hand, place a portion of the filling in the center, and carefully close it, shaping a fritter. Ensure the filling is well sealed inside
- Bake the fritters: Preheat the oven to 180°C (350°F). Grease a baking sheet with olive oil. Arrange the cauliflower fritters on the baking sheet, leaving a small space between them
- Bake: Bake for approximately 25-30 minutes, or until the fritters are golden and firm. Flip them halfway through to brown evenly. Serve hot and enjoy these wonderful healthy stuffed cauliflower fritters!
