Ingredients
1.5 cups (200g) Roasted peanuts, skinless and unsalted
1 cup Wheat flour
1 cup Brown sugar
2 large Eggs
0.5 cup Whole milk
0.25 cup Vegetable oil
1 tbsp Baking powder
0.5 tsp Cinnamon powder (optional)
1 pinch Salt
Q.B. Butter for greasing
Q.B. Wheat flour for dusting
Instructions
- Prepare the peanuts: In a blender or food processor, crush the roasted peanuts until you get a moist, coarse crumble. Reserve one tablespoon for decoration, if desired
- Mix the dry ingredients: In a large bowl, sift the wheat flour, brown sugar, cinnamon (if using), and salt. Add the peanut crumble (except the reserved portion) and mix well
- Mix the liquid ingredients: In another bowl, lightly beat the eggs. Add the milk and vegetable oil. Mix until combined
- Combine the mixtures: Pour the liquid ingredients over the dry ones. Stir gently with a spatula or whisk until incorporated. Do not overmix to avoid developing glute
- Add the baking powder: Finally, add the baking powder and mix gently just until it disappears into the batter. The Bolo Pé de Moleque batter for the Air Fryer will be thick, which is normal
- Prepare the pan: Grease a pan suitable for an air fryer with butter and dust with flour (check your appliance’s dimensions). A small pudding or cake pan (approximately 16-18cm in diameter) works well
- Bake in the Air Fryer: Pour the batter into the prepared pan. Place in the preheated air fryer at 160°C. The cooking time for the Bolo Pé de Moleque in the Air Fryer varies between 25 to 35 minutes, depending on your appliance’s power and pan size. Do the toothpick test: it should come out clea
- Finish: Carefully remove the cake from the air fryer. Let it cool slightly before unmolding. Sprinkle with the reserved peanuts or powdered sugar, if desired. Serve your wonderful Bolo Pé de Moleque in the Air Fryer!
Notes
Do not open the air fryer before 20 minutes of cooking, as this can cause the cake to deflate. Each air fryer has its own power; observe the cooking time and adjust if necessary. A toothpick inserted into the center should come out clean. Use a pan that fits perfectly in the air fryer basket, leaving space for air circulation. If the pan is too tall, the top may burn before the center cooks. Do not overbeat the batter after adding the flour; this ensures a soft and fluffy cake. Use good quality, preferably fresh, peanuts.
Store the cake in an airtight container at room temperature for up to 3 days. If you want it to last longer, you can refrigerate it for up to 5 days. For a fresh touch, reheat a slice quickly in the air fryer for about 2 to 3 minutes at 150°C, or until warm and with slightly crispy edges again.
If you don’t have brown sugar, you can use granulated sugar, but brown sugar provides special moisture and caramelized flavor. For a lactose-free version, replace whole milk with plant-based milk (almond, coconut, or oat work well). For an even more nutritious cake, add a handful of fine rolled oats to the batter. Do you like an extra touch? Orange or Sicilian lemon zest elevates the flavor. Want a cake with syrup? Prepare a simple caramel or soft brigadeiro syrup to drizzle over.
