Ingredients
2 medium Eggplants
2 tbsp Extra Virgin Olive Oil
Salt, to taste
Freshly ground Black Pepper, to taste
1 tsp Sweet Paprika (optional)
1/2 tsp Garlic Powder (optional)
1/2 tsp Dried Oregano (optional)
Instructions
- Prepare the eggplant: Wash the eggplants thoroughly and, without peeling, cut them into very thin slices. Use a mandoline to ensure uniform and thin slices, which is crucial for the crispiness of your eggplant chips
- Remove excess water: Arrange the eggplant slices on paper towels. Sprinkle salt over them and let them rest for 15-20 minutes. This process helps to extract excess water and bitterness, which is fundamental for making your air fryer eggplant chips crispy. Afterward, completely dry each slice with clean paper towels
- Season: In a large bowl, place the dried eggplant slices. Drizzle with olive oil and add salt, black pepper, paprika, garlic powder, and oregano (if using). Mix well with your hands so that all slices are evenly covered with the seasonings
- Preheat the Air Fryer: Preheat your Air Fryer to 180°C (350°F) for about 5 minutes
- Cook in the Air Fryer: Arrange the eggplant slices in a single layer in the Air Fryer basket, without overlapping. Cook for 10-15 minutes, flipping halfway through. The exact time may vary depending on the thickness of the slices and your Air Fryer model. Watch until they are golden and crispy, but not burned. Cook in batches if necessary
- Serve: Remove the Air Fryer Eggplant Chips from the Air Fryer and serve immediately to enjoy maximum crispiness
Notes
For the best results, slice the eggplant as thinly and uniformly as possible, preferably using a mandoline.
Do not skip the salting and drying step, as it significantly impacts the final crispiness and flavor.
Cook the chips in small batches to ensure proper air circulation and crispiness; do not overcrowd the Air Fryer basket.
Store any leftover chips in an airtight container at room temperature for up to 2 days. To reheat, place them back in the Air Fryer at 160°C (325°F) for 3-5 minutes, though they may not be as crispy as when fresh.
Freezing cooked eggplant chips is not recommended as they lose their crispy texture upon thawing.
