Description

This Apple Cinnamon Pudding is incredibly easy to make, combining the natural sweetness of apples with the warm spice of cinnamon. Ingredients

3 medium Apples (Fuji or Gala type)
3 large Eggs
1 cup (240ml) Whole milk
1 cup (200g) Refined sugar (or demerara)
1 cup (120g) Wheat flour
1 tablespoon Cinnamon powder
1 tablespoon Baking powder
2 tablespoons Unsalted butter (melted)
1 teaspoon Lemon zest (optional)


Instructions

  1. Preheat the oven to 180°C and grease a pudding mold or medium baking dish with butter and flour
  2. Prepare the Apples: Peel, core, and dice the apples into small cubes. Set aside
  3. Mix the Liquids: In a large bowl, beat the eggs, milk, sugar, and melted butter until homogeneous. If using lemon zest, add it now to enhance the flavor
  4. Incorporate the Dry Ingredients: In another bowl, sift the wheat flour, cinnamon powder, and baking powder. Mix well to combine the dry ingredients
  5. Combine Mixtures: Gradually add the dry ingredients to the liquids, gently mixing with a whisk or spatula until the flour is incorporated. Do not overmix to avoid developing glute
  6. Add the Apples: Fold the diced apple cubes into the batter
  7. Bake the Pudding: Pour the batter into the greased mold and bake in the preheated oven for about 35 to 45 minutes
  8. Test for Doneness: To check if the pudding is ready, insert a toothpick into the center. If it comes out clean, your pudding is perfect
  9. Cool and Serve: Remove from the oven and let it cool a bit before unmolding. Serve warm or at room temperature

Notes

Ensure all ingredients are at room temperature for better incorporation and final texture.

Do not overmix the batter after adding the flour, as excessive mixing can make the pudding heavy.

When dicing the apples, try to keep the pieces consistent so they cook evenly.

Allow the pudding to cool slightly in the mold before attempting to unmold to prevent it from breaking.

Dusting with a bit more cinnamon or powdered sugar before serving adds a charming final touch.

Store the pudding in an airtight container in the refrigerator for up to 3-4 days.

To reheat, you can microwave a slice for a few seconds or warm it in the oven for 10-15 minutes at 150°C.
