A simple, quick, and irresistible recipe for crispy breaded cheese, perfect as a snack, appetizer, or side dish for the whole family. It combines a soft, melted interior with a golden, crunchy exterior, bringing comfort and flavor to any table.
Ingredients
300g Cheese (minas padrão, mozzarella or coalho, in slices or blocks)
1 cup Wheat flour
2 units Large eggs
2 tablespoons Milk
1 1/2 cups Breadcrumbs
To taste Salt
To taste Black pepper
Enough Vegetable oil (for frying)
Instructions
- Prepare the Cheese: If using a block of cheese, cut it into slices or sticks approximately 1 cm thick. If already sliced, it's perfect. Make sure they are firm
- Set up Breading Station: In three separate shallow dishes, prepare: In the first dish, place the wheat flour. Season with a pinch of salt and black pepper. In the second dish, beat the eggs with the two tablespoons of milk. Add a pinch of salt. In the third dish, place the breadcrumbs, also seasoned with a little salt and pepper. If desired, add dried herbs here
- Bread the Cheese: Take each piece of cheese. First, coat it in the wheat flour, covering all sides well and removing any excess. Then, dip it into the beaten egg, making sure it is completely covered. Finally, coat it in the breadcrumbs, pressing gently so that it adheres well and forms a uniform layer. Repeat the process with all pieces
- Double Breading (Optional, but recommended): To ensure an extra crispy crust and prevent the cheese from leaking during frying, coat the breaded cheese again in the egg and then in the breadcrumbs
- Refrigerate: Place the breaded cheeses in the refrigerator for at least 15-30 minutes. This helps to firm up the breading and prevents the cheese from melting too quickly when frying
- Fry: In a deep pan, heat the vegetable oil over medium-high heat. The ideal temperature is about 170-180°C. If you don't have a thermometer, test with a small piece of breadcrumb; it should bubble and brown quickly
- Brown the Crispy Breaded Cheese: Fry the cheese pieces in batches, to avoid overcrowding the pan and lowering the oil temperature. Fry for about 1-2 minutes per side, or until golden and crispy
- Drain: Remove the Crispy Breaded Cheese from the pan with a slotted spoon and place on paper towels to drain excess oil. Serve immediately and enjoy your Crispy Breaded Cheese!

Cooling is crucial: Do not skip the step of refrigerating the breaded cheeses for at least 15 minutes. This ensures the breading adheres well and prevents cheese from leaking during frying.
Do not overcrowd the pan: Fry in small batches to maintain oil temperature and achieve a golden, dry crisp.
Oil temperature is key: Maintain oil at 170-180°C. Too cold, breading will be greasy; too hot, it will burn before cheese melts.
Serve immediately: The cheese is best enjoyed hot, with melted cheese inside and a crunchy crust.
Storage: Store cooked cheese in an airtight container in the refrigerator for up to 2 days; crispness may decrease.
Reheating: Reheat in a preheated oven at 180°C for 8-10 minutes, or in an airfryer at 180°C for 5-7 minutes, until hot and crispy. Avoid microwave as it will make it soggy.
