Description

Ingredients

2 xícaras Farinha de mandioca
2 colheres de sopa Manteiga ou azeite de oliva
1 medium Cebola picada
2 dentes Alho picado
100g Bacon em cubos pequenos
2 unidades Ovos cozidos picados
To taste Cheiro-verde picado (salsinha e cebolinha)
To taste Sal
To taste Pimenta-do-reino


Instructions

  1. Prepare the Bacon: Fry the bacon cubes in a large, deep skillet over medium heat until crispy and golden. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet
  2. Sauté the Aromatics: In the same skillet with the bacon fat (or add butter/olive oil), sauté the chopped onion until translucent. Add the chopped garlic and sauté for another minute until fragrant, being careful not to bur
  3. Add the Flour: Add the cassava flour to the skillet. Stir constantly over low to medium heat, slowly toasting the flour until it is lightly golden and crunchy (about 5 to 10 minutes)
  4. Finish with Flavor: Turn off the heat. Incorporate the reserved fried bacon and chopped hard-boiled eggs (if using). Add the chopped fresh herbs (cheiro-verde). Season with salt and black pepper to taste, adjusting as needed
  5. Serve: Transfer the delicious homemade farofa to a serving dish and serve warm as a perfect complement to any grilled meat

Notes

Choose a good quality cassava flour; toasted flour speeds up the process, while raw flour develops a deeper flavor when toasted.

Toast the flour over low to medium heat, stirring constantly, to ensure even crunchiness and prevent burning.

If the farofa seems too dry, add a little more butter or olive oil, or even a splash of meat broth for added moisture and flavor.

The base of the farofa (sautéed aromatics and toasted flour) can be prepared up to one day in advance. Add fresh ingredients like bacon, eggs, and herbs just before serving.

For extra flavor, consider adding pimenta biquinho, lemon zest, or a touch of red pepper flakes.

Store leftover farofa in an airtight container in the refrigerator for up to 3 days. Ensure it is completely cool before storing.

To reheat, spread the farofa on a baking sheet and warm in a preheated oven at 180°C (350°F) for 10-15 minutes, or reheat in a skillet over low heat, stirring constantly with a drizzle of olive oil or butter to restore texture.
