Ah, o cheirinho de biscoito caseiro saindo do forno me transporta direto para a minha infância na casa da minha avó… Esse Biscoito Salgado com Orégano e Azeite é a resposta perfeita. A combinação do azeite extravirgem com o aroma do orégano seco cria uma explosão de sabor. É uma delícia, fica sequinho no ponto certo, e não precisa de fermento nem de leite!


Ingredients

2 cups (250g) All-purpose flour
1/2 cup (120ml) Extra virgin olive oil
1/4 cup (60ml) Warm water
1 tbsp (3g) Dried oregano
1 tsp (5g) Salt (or to taste)
3 tbsp (30g) Grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 180°C (350°F). Lightly grease a large baking sheet with olive oil
  2. In a large bowl, mix together the all-purpose flour, dried oregano, and salt. If using Parmesan cheese, add it now
  3. Add the olive oil and warm water. Mix well with your hands until a homogeneous dough forms. The dough should not stick to your fingers; if needed, add a little more flour
  4. Divide the dough into small balls (about the size of a walnut). Place them on the greased baking sheet, leaving a small space between them
  5. With a fork, lightly flatten each ball, creating a ridged pattern. This helps them bake evenly and makes the cookies more attractive
  6. Bake in the preheated oven for 20-25 minutes, until the edges are golden. Baking time may vary; keep an eye on them
  7. Remove from the oven and let cool completely on a wire rack. They will become crunchier as they cool

Notes

Use good quality extra virgin olive oil for the best flavor.

Do not overwork the dough; mix just until ingredients come together to avoid tough cookies.

If the dough is too dry, add a little more water, one tablespoon at a time. If sticky, add a bit more flour.

For a more intense oregano flavor, hydrate the oregano in a little of the olive oil for 10 minutes before adding to the flour.

Store in an airtight container at room temperature for up to a week. Do not refrigerate, as moisture will ruin the texture.

To freeze: shape the cookies, freeze them on a baking sheet for 2 hours, then transfer to a freezer bag. Bake from frozen, adding 5 minutes to the baking time.
