Ingredients
1 lata (395g) Leite Condensado
1 caixa (200g) Creme de Leite
4 colheres de sopa Suco Concentrado de Maracujá
1 colher de sopa Manteiga sem Sal
½ colher de chá Raspas de Limão (opcional)
½ xícara (100g) Sementes de Gergelim Branco
½ xícara (100g) Açúcar
2 colheres de sopa Água
Manteiga para untar as mãos
Gergelim torrado para enrolar (opcional)
Instructions
- For the brigadeiro: In a heavy-bottomed pan, add the condensed milk, cream, passion fruit juice, butter, and lemon zest (if using)
- Cook over medium heat, stirring constantly, to prevent sticking to the bottom
- Continue cooking until the mixture thickens and pulls away from the bottom of the pan, reaching the rolling consistency for brigadeiro. This takes about 10-15 minutes
- Transfer the brigadeiro to a buttered plate and cover with plastic wrap, touching the surface to prevent a 'skin' from forming
- Let it cool completely at room temperature or in the refrigerator for at least 2 hours
- For the sesame brittle: In a small saucepan, mix the sugar and water. Cook over medium heat, without stirring, until a golden caramel forms
- Once the caramel is ready, add the sesame seeds and mix quickly to incorporate
- Pour the sesame mixture onto a silicone mat or buttered parchment paper. Spread thinly with a spoo
- Let it cool completely and harden. Once cold, break into small pieces
- To assemble: With lightly buttered hands, take small portions of the passion fruit brigadeiro and roll them into balls
- Roll each ball in the crushed sesame brittle, coating all sides well. If desired, also roll in toasted sesame seeds for an extra touch
- Place the brigadeiros in paper cups and serve. Your Passion Fruit Brigadeiro with Sesame Brittle is ready!
Notes
Use a heavy-bottomed pan for the brigadeiro to ensure even cooking and prevent burning. Stir continuously, scraping the bottom and sides for a creamier result. The ideal point is when you can see the bottom of the pan for a few seconds when you pass the spoon.
For the sesame brittle, do not stir the sugar and water while caramelizing to prevent crystallization. Let the caramel reach a nice golden color before adding the sesame. Store the brittle in an airtight container to protect it from humidity.
Ensure the brigadeiro is well-chilled before rolling. Lightly buttered hands will prevent sticking and give a smooth finish.
Store brigadeiros in an airtight container in the refrigerator for up to 5 days. For best crunch, store the sesame brittle separately and add it just before serving.
Brigadeiros are best enjoyed at room temperature or slightly chilled; remove from the refrigerator 15-20 minutes before serving for optimal texture.
Substitutions: Use frozen passion fruit pulp if fresh is unavailable. For the brittle, try adding vanilla essence or substitute with chopped peanuts or crushed nuts. For a lactose-free version, use lactose-free condensed milk, cream, and vegetable margarine.
Variations: Experiment with other fruit flavors for the brigadeiro, like lemon, strawberry, or guava. A pinch of fleur de sel in the brittle can enhance the flavor.
