Description

Traditional Portuguese popovers with a crispy exterior and soft interior, topped with vanilla glaze. These Cavacas are surprisingly easy to make with basic ingredients and create a magical contrast of textures.


Ingredients

1 cup Whole milk
1 cup All-purpose flour
3 large Eggs
½ tsp Salt
Butter for greasing
1 cup Powdered sugar
1½ tbsp Milk
½ tsp Vanilla extract
Lemon zest (optional)


Instructions

  1. Preheat oven to 220°C (425°F). Generously grease 12 standard muffin tins with butter
  2. Blend milk, eggs, flour, and salt in a blender on high speed for 1 minute until smooth
  3. Pour batter into prepared tins, filling each halfway. Bake immediately for 20 minutes at 220°C without opening ove
  4. Reduce temperature to 180°C (350°F) and bake for 15-20 more minutes until golden brown and firm
  5. While baking, prepare glaze by mixing powdered sugar, vanilla, and milk until smooth and slowly dripping from spoo
  6. Remove cavacas from oven, release from tins, and cool on rack for 5 minutes. Dip tops in glaze or drizzle over

Notes

Use room temperature ingredients for better rise.

Do not open oven during first 20 minutes of baking.

Best consumed same day. Store without glaze in airtight container for up to 2 days.

Reheat in 180°C oven for 5-8 minutes to restore crispness.
