Description

Ingredients

2 ripe bananas

1/2 cup peanut butter (or other nut butter)

1 1/2 cups almond flour

1 egg

2 tablespoons coconut oil

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 cup 70% dark chocolate chips (optional)

Cinnamon to taste

Pinch of salt


Instructions

1. 1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

2. 2. In a large bowl, mash the bananas with a fork until smooth.

3. 3. Add the egg, coconut oil, and vanilla extract. Mix well.

4. 4. Stir in the peanut butter until fully incorporated.

5. 5. In a separate bowl, whisk together the almond flour, baking powder, cinnamon, and salt.

6. 6. Pour the dry ingredients into the wet ingredients and mix until a homogeneous dough forms.

7. 7. Gently fold in the chocolate chips.

8. 8. Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, leaving space between each. Flatten slightly with the back of a spoon.

9. 9. Bake for 12-15 minutes, or until the edges are golden. The centers will still look slightly soft; they will firm up as they cool.

10. 10. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter cookie, add a few drops of stevia or xylitol to the dough. You can substitute almond flour with certified gluten-free oat flour if desired.

For an egg-free version, mix 1 tablespoon of ground flaxseed or chia with 3 tablespoons of water and let sit for 5 minutes before adding to the mixture.

Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. Reheat in the oven or air fryer for a few minutes to regain crispiness.
