Description
A quick and easy recipe for Cueca Virada (a fried pastry), with a crispy exterior and soft interior, filled with savory or sweet fillings. Perfect for a snack or quick meal.
Ingredients
2 cups All-purpose flour
1 cup Warm water
1 tsp Salt
As needed Oil for frying
To taste Filling of choice
Instructions
- In a bowl, mix the flour and salt
- Gradually add the warm water, stirring with a spoo
- Knead the dough for 5 minutes until smooth and homogeneous
- Cover the dough with a cloth and let it rest for 15 minutes
- Roll out the dough on a floured surface using a rolling pi
- Cut circles using a cutter or a cup
- Place the filling in the center of each circle
- Fold in half to form a half-moon, pressing the edges to seal
- Heat the oil in a deep frying pa
- Fry the pastries until golden on both sides
- Drain on paper towels
- Serve immediately
Notes
The water should be warm, not hot, to activate the gluten without cooking the flour.
Do not over-knead the dough to keep it tender.
Resting the dough is crucial to relax the gluten.
Use oil at 180°C (350°F) for optimal frying.
Prick the pastries with a fork before frying to prevent bursting.
Store fried pastries in a closed container in the fridge for up to 2 days.
Reheat in an air fryer or oven to restore crispiness; avoid microwaving.
Uncooked pastries can be frozen for up to 3 months and fried directly from frozen.
