Description

Um curau de milho verde cremoso, tradicional brasileiro, com textura aveludada e sabor puro do milho. Perfeito para sobremesa ou como abraço afetivo. Use milho fresco para o melhor resultado.


Ingredients

4 large ears Fresh corn (milho verde)
2 cups Whole milk
1 cup Granulated sugar
1 can (395 g) Sweetened condensed milk
1 pinch Salt
Ground cinnamon (to taste, for sprinkling)


Instructions

  1. Remove husks and silk from corn ears. Wash well. Cut kernels off cobs with a sharp knife
  2. Place corn kernels in a blender. Add whole milk. Blend for 2 minutes until smooth. Do not over-blend to avoid foam
  3. Pour mixture through a clean cloth or fine sieve. Squeeze to extract all liquid. Discard dry pulp
  4. Transfer strained liquid to a large pot. Add sugar, condensed milk, and a pinch of salt. Mix well
  5. Cook over medium heat, stirring constantly with a wooden spoon. Cook for 15-20 minutes until thickened and bubbling. Once boiling, cook 3 more minutes. Remove from heat
  6. Pour into a serving dish or individual bowls. Let cool naturally, then refrigerate for at least 2 hours
  7. Sprinkle cinnamon on top before serving. Serve cold or warm

Notes

Use fresh corn for best flavor and texture. Canned corn can be substituted but will alter taste.

Stir constantly during cooking to prevent lumps and scorching.

Adjust sugar to taste; condensed milk is already sweet.

For a lighter version, replace condensed milk with coconut milk and demerara sugar.

Add lemon zest or vanilla extract for extra flavor.

Store in a sealed container in the fridge for up to 5 days. Do not freeze.

Reheat gently on the stove with a splash of milk to restore creaminess.
