Ingredients
1 cup Medjool dates (pitted, firmly packed)
1 cup Brazil nuts or almonds
2 tbsp cocoa powder (optional)
1 tbsp coconut oil (or water, if needed)
1 pinch sea salt
Instructions
- Place the nuts in a food processor and pulse until a coarse meal forms
- Add the dates and process until the mixture is uniform
- If desired, add cocoa powder and salt; pulse to combine
- Taste and adjust sweetness if needed
- Transfer mixture to a bowl. With slightly moist hands, roll into tablespoon-sized balls
- Refrigerate for 30 minutes to firm up
- Serve chilled or at room temperature
Notes
Use moist, soft dates for best texture; if dry, soak in hot water for 10 minutes and drain well before processing.
Do not over-process the nuts; a chunky texture is desirable.
Lightly oil your hands with coconut oil to prevent sticking.
Add a pinch of cinnamon for extra flavor.
Store in an airtight container, with layers separated by parchment paper, in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
For a protein boost, add 1 scoop of whey or plant protein powder.
For a sweeter version, add more dates or a drizzle of honey (adjusting for vegan if needed).
