Ingredients

2 cups Cooked and ground pine nuts
0.5 cup Coarsely chopped Brazil nuts
0.25 cup Fresh chopped parsley
1 unit Small chopped onio
2 cloves Crushed garlic
0.5 cup Breadcrumbs (or oat flour)
1 large Egg
2 tablespoons Olive oil
To taste Salt
To taste Black pepper
0.5 teaspoon Ground cumi
0.5 teaspoon Sweet paprika


Instructions

  1. Prepare the pine nuts: If using fresh pine nuts, cook them in a pressure cooker for about 30-40 minutes after reaching pressure. Peel and finely chop or grind
  2. Sauté aromatics: In a frying pan, heat one tablespoon of olive oil. Sauté the chopped onion until translucent. Add the garlic and sauté for another minute. Turn off the heat
  3. Combine ingredients: In a large bowl, combine the ground pine nuts, coarsely chopped Brazil nuts, parsley, and the sautéed onion and garlic
  4. Add seasonings: Season with salt, black pepper, cumin, and paprika. Mix well to incorporate the flavors
  5. Incorporate binder: Add the beaten egg and breadcrumbs (or oats). Mix everything with your hands until you get a homogeneous mixture that can be molded. If the mixture is too wet, add more breadcrumbs, one spoonful at a time
  6. Shape the burgers: Divide the mixture into equal portions and shape the burgers into discs about 1.5 to 2 cm thick. This recipe yields approximately 6 to 8 medium burgers
  7. Cook the burgers: Heat the remaining olive oil in a large frying pan over medium heat. Place the burgers and brown for about 4-5 minutes on each side, or until they are well browned and crispy on the outside

Notes

Do not overcook the pine nuts; they should be soft but not falling apart, to avoid an excessively wet burger mixture.

If the burger mixture is too sticky, refrigerate it for 15-20 minutes before shaping to firm it up.

When frying, use medium heat to brown the burgers evenly on the outside and cook them through without burning.

Do not flip the burgers before a golden crust forms to prevent them from sticking or falling apart.

For a more intense flavor, lightly toast the Brazil nuts before chopping.
