Description
Uma versão fit da clássica paçoca brasileira, feita com açúcar mascavo para um toque caramelizado e mais nutrientes. Rápida e fácil, mantém a textura que desmancha na boca.
Ingredients
1 cup Roasted unsalted peanuts
1/2 cup Brown sugar
2 tbsp Peanut flour or oat flour
1 tbsp Butter or coconut oil
1 pinch Salt
Instructions
- Place the roasted peanuts in a food processor. Pulse for 30 seconds until a coarse crumb forms. Do not over-process
- Add the brown sugar. Pulse for another 15 seconds to mix well
- Add the peanut or oat flour and salt. Pulse briefly just to combine. The mixture should be moist
- Drizzle in the butter or coconut oil. Pulse again for 10 seconds. The mixture will become more cohesive
- Transfer the mixture to a bowl. With clean hands, press small portions into balls or use silicone molds. Press firmly to shape
- Unmold and serve. Refrigerate for 15 minutes if a firmer texture is desired
Notes
Use fresh peanuts; old ones can be bitter.
Don't skip the salt; it enhances the flavor.
If the mixture is too dry, add 1 teaspoon of water or plant milk. If too sticky, add more oat flour.
Never process the peanuts for more than 1 minute total or it will turn into peanut butter.
Store in an airtight container in the refrigerator for up to 2 weeks or at room temperature for 5 days. Freeze for up to 3 months.
