Description

Uma versão fit da clássica paçoca brasileira, feita com açúcar mascavo para um toque caramelizado e mais nutrientes. Rápida e fácil, mantém a textura que desmancha na boca.


Ingredients

1 cup Roasted unsalted peanuts
1/2 cup Brown sugar
2 tbsp Peanut flour or oat flour
1 tbsp Butter or coconut oil
1 pinch Salt


Instructions

  1. Place the roasted peanuts in a food processor. Pulse for 30 seconds until a coarse crumb forms. Do not over-process
  2. Add the brown sugar. Pulse for another 15 seconds to mix well
  3. Add the peanut or oat flour and salt. Pulse briefly just to combine. The mixture should be moist
  4. Drizzle in the butter or coconut oil. Pulse again for 10 seconds. The mixture will become more cohesive
  5. Transfer the mixture to a bowl. With clean hands, press small portions into balls or use silicone molds. Press firmly to shape
  6. Unmold and serve. Refrigerate for 15 minutes if a firmer texture is desired

Notes

Use fresh peanuts; old ones can be bitter.

Don't skip the salt; it enhances the flavor.

If the mixture is too dry, add 1 teaspoon of water or plant milk. If too sticky, add more oat flour.

Never process the peanuts for more than 1 minute total or it will turn into peanut butter.

Store in an airtight container in the refrigerator for up to 2 weeks or at room temperature for 5 days. Freeze for up to 3 months.
