Description

Uma refrescante e nutritiva salada de frutas com granola caseira de castanhas e coco, perfeita para café da manhã, lanche ou sobremesa. Uma receita cheia de amor e memórias familiares, que combina a doçura natural das frutas com a crocância das castanhas e coco.


Ingredients

1 medium sized ripe papaya (mamão papaia)
2 bananas (banana nanica)
1 red apple (maçã vermelha)
1 orange (laranja pera)
1 cup green seedless grapes
1 cup fresh strawberries
0.5 cup dried shredded coconut
0.5 cup chopped Brazil nuts
0.5 cup chopped cashew nuts
1 cup rolled oats (flocos finos)
2 tablespoons pure honey
1 tablespoon lemon juice


Instructions

  1. Preheat oven to 180°C (350°F)
  2. In a bowl, mix oats, chopped cashews and Brazil nuts, shredded coconut, and honey. Stir well to combine
  3. Spread the granola mixture on a baking sheet lined with parchment paper. Bake for 15 minutes, stirring halfway through, until lightly golden. Remove from oven and let cool completely; it will become crunchy as it cools
  4. Meanwhile, wash all fruits thoroughly. Peel the papaya and cut into medium cubes. Slice the banana into rounds. Cut the apple into small cubes and toss with lemon juice to prevent browning. Squeeze the orange and reserve the juice. Halve the strawberries. Leave the grapes whole
  5. In a large bowl, combine all the cut fruits. Drizzle with the reserved orange juice and gently mix with a large spoo
  6. Just before serving, top the fruit mixture with the homemade granola. Garnish with extra shredded coconut if desired. Serve immediately for best texture

Notes

Do not add granola to the fruit until serving, as it will become soggy.

Use ripe fruits for natural sweetness, but avoid overly soft bananas.

Store fruit salad (without granola) in a sealed container in the fridge for up to 2 days. Keep granola in an airtight container at room temperature for up to 2 weeks.

This recipe is naturally gluten-free if using certified gluten-free oats.

Substitute honey with agave syrup or coconut sugar for a vegan version; fruits can be swapped for seasonal options like mango, kiwi, or pineapple.
