Description

Um delicioso strogonoff de salsicha de frango com pinhão, uma versão infantil e cremosa que agrada crianças e adultos. Prático e cheio de sabor, é um abraço em forma de comida.


Ingredients

4 large Chicken sausages (hot dog type) (about 300 g)
1 heaped cup Boiled and peeled pinhão (Brazilian pine nuts)
1 small Onion (finely chopped)
2 cloves Garlic (minced)
1 tablespoon Butter or coconut oil
0.5 cup Homemade tomato sauce or tomato puree
1 tablespoon Tomato paste (optional, for color)
1 box (200 g) Heavy cream or soy cream
1 teaspoon Yellow mustard (mild)
To taste Salt (a pinch or two)
For serving: Potato straw or white rice


Instructions

  1. Cut the chicken sausages into thin slices. Finely chop the boiled pinhão into small pieces (like a coarse farofa)
  2. In a medium pan, melt the butter over medium heat. Add the chopped onion and sauté until transparent (about 2 minutes). Add the garlic and stir for 30 seconds until fragrant
  3. Add the sausage slices and sauté for 3-4 minutes, stirring occasionally, until lightly browned
  4. Pour in the tomato sauce and tomato paste (if using). Mix well. Add the chopped pinhão. Cook over low heat for 5 minutes, stirring occasionally, letting the pinhão release its creaminess
  5. Turn off the heat. Wait 1 minute, then add the cream and mustard. Stir gently to combine. Adjust salt to taste
  6. Serve immediately with white rice and crispy potato straw

Notes

To cook pinhão: pressure cook for 20 minutes with water and salt, then peel while still warm (use a cloth).

If the sauce is too thick, add a splash of water or milk. If too thin, simmer uncovered for 2 minutes.

Never add cream over high heat; always turn off the heat first to prevent curdling.

A pinch of freshly grated nutmeg can elevate the flavor without kids noticing.

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently on the stovetop with a tablespoon of water or milk.

To freeze, prepare up to step 4 (without cream), cool, and freeze for up to 1 month. Thaw, reheat, then finish with cream.
