Description

A delicious strawberry pie with a light, buttery crust and creamy filling, perfect for any occasion.


Ingredients

2 cups Farinha de trigo (all-purpose flour)
1/2 cup Manteiga gelada (cold butter, cubed)
1/4 cup Açúcar (sugar)
1 unit Gema de ovo (egg yolk, large)
2 to 3 tablespoons Água gelada (ice water, if needed)
500g Morangos frescos (fresh strawberries, washed and chopped)
1 can Leite condensado (sweetened condensed milk, 395g)
2 tablespoons Amido de milho (cornstarch)
1 cup Leite integral (whole milk)
1 teaspoon Essência de baunilha (vanilla extract, optional)


Instructions

  1. In a large bowl, mix flour and sugar. Add cold butter cubes. Using your fingertips, rub the butter into the flour until coarse crumbs form. Add egg yolk and mix until a homogeneous dough forms. If dry, add ice water, one tablespoon at a time. Wrap in plastic wrap and refrigerate for 20 minutes
  2. While dough rests, prepare the cream. In a saucepan, mix condensed milk and cornstarch. Add whole milk and vanilla extract. Cook over medium heat, stirring constantly, until thickened to a smooth, thick cream. Set aside
  3. Preheat oven to 180°C (350°F). Roll out the dough between two sheets of plastic wrap. Line a 22cm removable-bottom tart pan. Prick the bottom with a fork. Bake the crust for 10 minutes to firm up. Remove from oven. Spread the cream evenly over the crust. Distribute chopped strawberries on top
  4. Return the pie to the oven and bake for 25-30 minutes, until the crust edges are lightly golden and the strawberries release juice. Let cool completely before unmolding. Refrigerate for a few hours for best flavor

Notes

Use very cold butter for a crisp crust. Avoid overworking the dough.

Pre-baking the crust prevents it from getting soggy.

Pat strawberries dry after washing to avoid excess moisture.

Store in the refrigerator, covered, for up to 3 days. Do not freeze.

Reheat slices in a 150°C (300°F) oven for 5 minutes to restore crispness. Avoid microwaving.
