This creamy chicken pasta is a quick, one-pot meal that warms the soul and brings the family together. It's perfect for busy weeknights when you want a delicious homemade dish without a mountain of dishes.
Ingredients
500 g Pasta (screw or penne)
3 medium Chicken breasts, cubed
2 boxes (400 g) Creme de leite (heavy cream)
1 cup Milk
200 g Mozzarella cheese, grated
3 cloves Garlic, minced
1 medium Onion, chopped
2 tablespoons Butter or oil
To taste Salt and black pepper
To taste Fresh parsley or chives, chopped
Instructions
- Season chicken cubes with salt, pepper, and minced garlic. In a large pot, melt butter and brown chicken on all sides, about 5 minutes. Remove chicken and set aside
- In the same pot, sauté chopped onion until translucent
- Add raw pasta and 4 cups of boiling water. Season with salt. Cook over medium heat, stirring occasionally, until pasta is al dente and water is almost absorbed
- Reduce heat. Add heavy cream, milk, and mozzarella. Stir until cheese melts and sauce is creamy
- Return chicken to the pot. Mix gently. Garnish with fresh parsley or chives. Serve immediately
Notes
If the sauce becomes too thick, add a splash of warm milk.
You can substitute chicken breast with shredded thighs for a richer flavor, or add vegetables like corn, peas, or broccoli.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a little milk over low heat, not in the microwave.
For a gluten-free version, use gluten-free pasta and ensure all other ingredients are gluten-free.
