Description

This creamy chicken pasta is a quick, one-pot meal that warms the soul and brings the family together. It's perfect for busy weeknights when you want a delicious homemade dish without a mountain of dishes.


Ingredients

500 g Pasta (screw or penne)
3 medium Chicken breasts, cubed
2 boxes (400 g) Creme de leite (heavy cream)
1 cup Milk
200 g Mozzarella cheese, grated
3 cloves Garlic, minced
1 medium Onion, chopped
2 tablespoons Butter or oil
To taste Salt and black pepper
To taste Fresh parsley or chives, chopped


Instructions

  1. Season chicken cubes with salt, pepper, and minced garlic. In a large pot, melt butter and brown chicken on all sides, about 5 minutes. Remove chicken and set aside
  2. In the same pot, sauté chopped onion until translucent
  3. Add raw pasta and 4 cups of boiling water. Season with salt. Cook over medium heat, stirring occasionally, until pasta is al dente and water is almost absorbed
  4. Reduce heat. Add heavy cream, milk, and mozzarella. Stir until cheese melts and sauce is creamy
  5. Return chicken to the pot. Mix gently. Garnish with fresh parsley or chives. Serve immediately

Notes

If the sauce becomes too thick, add a splash of warm milk.

You can substitute chicken breast with shredded thighs for a richer flavor, or add vegetables like corn, peas, or broccoli.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a little milk over low heat, not in the microwave.

For a gluten-free version, use gluten-free pasta and ensure all other ingredients are gluten-free.
